What the Cut?

Americans are eating more meat than ever. Since 1950 annual meat consumption has increased by 66 pounds a person. As a nation, we’re consuming about 75 billion pounds meat a year, and we’re not the only ones getting our grub on. Literally every country relies on meat to help define its culinary identity. Clearly there’s an undeniable taste for meat. So why does the average grocery store only stock a handful of the available cuts? What about the rest of the animal? What the Cut? is a half-hour sourcing and cooking show that addresses whole animal utilization, one cut at a time. We’ll explore supermarkets, farms, processing plants, butcher shops and back alleys to help us feed our obsession with meat. Along the way, What the Cut? will demystify hundreds of cuts of meat and introduce versatile, straightforward, affordable, and flat-out awesome recipes that make the most of the entire animal - tongue to trotter.
